Weight Watcher's Cobb Salad


This All-Tossed-Together Cobb Salad is from the Weight Watcher's One Pot Cookbook. My whole family will eat this salad, which really says something to how good it is!
All-Tossed-TogetherCobb Salad
2tablespoons red wine vinegar1 tablespoonextra-virgin olive oil¼ teaspoonsalt1/8 teaspoonblack pepper1 small headromaine lettuce, thinly sliced2 cupsshredded cooked skinless chicken breast1 largetomato, seeded and chopped1 small Hassavocado, halved, pitted, peeled, and cut into ½-inch dice2 scallions,thinly sliced2hard-cooked large egg whites, chopped¼ cupcrumbled reduced-fat blue cheese2tablespoons chopped fresh flat-leaf parsley
To makedressing, whisk together vinegar, oil, salt, and pepper in serving bowl.Add allingredients except blue cheese and parsley to dressing; toss until mixed well.Serve sprinkled with cheese and parsley.
Serving size is 2 cups. Weight Watchers Points Plus = 7
